Add dried somen noodles in the boiling water, gently stirring noodles with chopsticks. Boil somen noodles, following the package instructions. It usually takes a couple minutes to boil somen. If it's necessary, add a little bit of cold water in the pan to prevent overflowing.&lt;br /&gt;Drain somen in a colander and cool them under running water.&lt;br /&gt;Wash the noodles with hands under running water. Serve drained cold somen in a large serving bowl. Remove stems from shiitake and slice thinly.&lt;br /&gt;Heat 2/3 cup of the water used for rehydrating shiitake in a medium pan. Add shiitake and soy sauce, sugar, and mirin. Sprinkle cornstarch over pork meat and stir the meat. Boil starch nooldes (harusame) in a pan for a min. and drain. Cut the noodles into 3-inch length. Cut shiitake into thin strips. Heat oil in a frying pan and add ginger and saute. Add pork meat in the pan and saute well. Further, add shiitake and bean sprout and saute. Add chicken soup, sugar, soy sauce, sesame oil, and sake in the pan. Add starch noodles in the pan and simmer. When it boils, add mixture of water and cornstarch and stir well. Place the filling into a bowl and cool. Put 1-2 tbsps of filling on an egg roll wrapper. Fold one side over the filling to cover. Further, fold both sides of the wrapper over and roll to the edge. Seal the edge with the mixture of flour and water. Heat oil in a deep pan and fry spring rolls in 360 F until it's brown. Tatsuta indicates a way of cooking, which is a type of deep frying. After marinating meat/fish, sprinkle the meat with Japanese katakuri-ko (dogtooth violet starch) before frying. You can use corn starch if you don't have katakuriko.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;  * 4 chicken thighs&lt;br /&gt;  * 3 tbsps soy sauce&lt;br /&gt;  * 2 tbsps sake&lt;br /&gt;  * 1 tbsps mirin&lt;br /&gt;  * 2 tsps fresh ginger juice&lt;br /&gt;  * 1/3 cup corn starch/flour/Japanese katakuriko starch&lt;br /&gt;  * vegetable oil for frying&lt;br /&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Cut chicken thighs into bite-sized pieces. Peel ginger and grate it, then squeeze it to take some juice. Mix saysauce, mirin, sake, and ginger juice in a bowl. Marinate chicken pieces in the sauce for 30min. Take out chicken from the sauce and pat lightly with paper towels. Preheat oil in 330 F in a deep pan. Lightly dust chicken with flour/corn starch and fry them. When chicken pieces are cooked well, remove from the pan and drain. *Be careful not to fry in high temperature, since soy sauce tends to burn easily. Chirashizushi is a kind of sushi, which is colorful sushi.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;  * 3 cups sushi rice&lt;br /&gt;  * 4 shiitake mushrooms&lt;br /&gt;  * 1/2 cucumber&lt;br /&gt;  * 3/4 cup dashi soup&lt;br /&gt;  * 3 eggs&lt;br /&gt;  * raw tuna/salmon slices&lt;br /&gt;  * boiled shrimp&lt;br /&gt;  * 2 tbsps mirin&lt;br /&gt;  * 1 tbsp soysauce&lt;br /&gt;  * 3 tsps sugar&lt;br /&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Prepare sushi rice. Put dashi soup, mirin, soysauce, and sugar(2tsps) in a pan. Add shiitake mushrooms in the pan and simmer untilthe liquid is gone. Cool the simmered shiitake mushrooms and slice them thinly. Sushi rice is packed in seasoned aburaage (fried tofu) pouches.&lt;br /&gt;&lt;br /&gt;Ingredients:&lt;br /&gt;&lt;br /&gt;   * *For sushi rice:&lt;br /&gt;   * 1 1/2 cup Japanese rice&lt;br /&gt;   * 1 2/3 cup water&lt;br /&gt;   * 3 Tbsp vinegar&lt;br /&gt;   * 1 1/2 Tbsp sugar&lt;br /&gt;   * 1/2 tsp salt&lt;br /&gt;   * 2 Tbsp white sesame seeds&lt;br /&gt;   * *For cooking aburaage&lt;br /&gt;   * 6 abura-age (fried tofu)&lt;br /&gt;   * 1 cup dashi soup stock&lt;br /&gt;   * 2 1/2 Tbsp sugar&lt;br /&gt;   * 2 Tbsp mirin&lt;br /&gt;   * 2 Tbsp soy sauce&lt;br /&gt;&lt;br /&gt;INSTRUCTIONS&lt;br /&gt;Start cooking rice. Put aburaage into boiling water for a moment to remove the excess oil. Drain and dry with paper towels. Cut the aburaage in halves so that each piece have an open end. Put dashi soup stock, sugar, mirin, and soy sauce in a pan and bring to a boil. Add aburaage in the pan and lower the heat. Put a lid and simmer until the liquid is alomost gone. Stop the heat and let them cool for a while. Prepare sushi rice. Mix sesame seeds in the sushi rice. Wet your hands and make small mounds of sushi rice. Take a piece of aburaage and lightly press to remove the excess liquid. Open the pouch and stuff a mound of sushi rice inside. Fold in the open side to close the pouch. The &lt;span style="font-weight: bold;"&gt;Japanese food&lt;/span&gt; of inarizushi is ready to serve....great taste !
